
Veggie Chow Mein
I found this recipe from Aura Art of Healthy Living, and it's become one of my new winter staples. Packed with healthy veggies, especially cabbage, it's a delicious and nourishing meal. Cabbage is loaded with fiber, vitamin C, and antioxidants, making it great for boosting immunity and supporting digestive health. Plus, this dish is high in protein, making it a satisfying option for any night of the week. The combination of vibrant vegetables with the texture of noodles—without the carbs—offers a wholesome, nutrient-dense meal that’s easy to prepare and full of flavor.
Ingredients
- 1 tbsp vegetable oil
- 2 large eggs
- 1 head green cabbage shredded
- 2 cups matchstick carrots
- 3-4 scallion chopped
- 1 tbsp red onion chopped
- 2 cloves garlic chopped
- 1 1" ginger cube chopped
Instructions
- First scramble eggs using cooking spray and a little salt. Set aside.
- Heat a large wok and add oil. Add the onion, scallion garlic and ginger and sautee for 2-3 minutes.
- Add the cabbage and carrots and cook until wilted
- Add the scrambled eggs, soy sauce and oyster sauce and toss well with tongs. Add cooked chicken or shrimp here if desired
- Eat with chopsticks! Enjoy!
Notes
I added 3oz of shredded chicken to mine which made the total calories 170kcal.
