Sushi Burrito
A sushi roll with a twist! This oversized, handheld sushi burrito is packed with shrimp, salmon or tofu), crunchy veggies, fresh avocado, and creamy sauces—perfect for when you’re craving all the flavors of sushi but want the ease of a burrito.
Ingredients
- 4 rice paper wraps
- 1 seaweed sheet
- 1 cup shredded veggies carrots, cucumber, basil, mint, cilantro
- 1/2 avocado
- 2oz cooked tofu, shrimp or salmon get creative with raw but buy sushi grade!
Instructions
- Heat water in a large microwave safe bowl for 30 seconds.
- Dip rice paper wrappers for about 30 seconds into the water. Arrange on a flat clean towel overlapping each other.
- First add the sliced protein (tofu, shrimp, chicken or salmon) then all other veggies, avocado and then seaweed on top
- Roll away from you and tuck the sides in midway. Serve with dipping sauce from summer roll wraps.
