Healthy Banana Bread
What makes this healthy? For starters i've cut the oil and sugar by almost half. With all those ripe bananas i felt the bread didn't need the added sweetness! Also, oil contributes to most of the calories in a baked product. It's key to have that fat to keep the product moist and not "rubbery". The trick is to eliminate as much as you can without ruining that delicious texture. I think i nailed it.
Ingredients
- 3 bananas very ripe, mashed well
- 1 3/4 cup flour
- 3/4 cup sugar
- 1/2 tsp baking soda
- 1/2 tsp kosher salt
- 3 eggs
- 1/2 cup oil
- 1/2 cup water
Instructions
- Preheat oven to 350 degrees F
- Coat a loaf pan with baking spray
- Combine the sugar, eggs, oil and water in one smaller bowl
- Combine the flour, baking soda and salt in another larger bowl
- Add the wet ingredients to the dry and stir (but until combines, don't over stir)
- Fold in the bananas at the end
- Bake for approximately 50 minutes- 1 hour
