These Green Goddess Skewers taste like they were plucked straight from the garden. Juicy, marinated chicken grilled to perfection pairs beautifully with fresh herbs and veggies—making them the perfect addition to any summer meal

Ingredients
  

  • 1 cup spinach
  • 1/2 cup parmesan grated
  • 3 tbsp olive oil
  • 1 clove garlic
  • 1/4 tsp salt and pepper
  • 1.5 lbs chicken breast cut into 1" pieces
  • 2 cups cherry tomatoes

Instructions
 

  • Add the first 5 ingredients to a blender and blend until smooth. Use a small blender or food processor.
  • Mix marinade with the chicken and let it sit at least 30 minutes or up to 2 days
  • wet skewers to soften them
  • add tomato, chicken piece, tomato until around 5 pieces of chicken
  • heat grill and use grilling spray
  • cook about 3-5 minutes on each side
  • pair it with an ear of corn and roasted squash or throw into a salad of garden veggies
