Cranberry Apple Oat Muffins

It’s like an oatmeal cup. This is a GREAT toddler friendly recipe. It has only good nutrients inside but shaped like a muffin so it fools them into thinking it’s a treat! It’s great for on the go just nuke in the microwave. I make a batch of these and freeze them.

Ingredients:

2 c rolled oats (quick oats)

1c almond flour (you can substitute another cup of oats if that’s all you have)

1c skim milk

2 large eggs

1/4c brown sugar

1/4c craisins

1 medium apple, cored and cut into small pieces

1 tsp cinnamon

1 tsp baking powder

1/2 tsp kosher salt

Directions;

Preheat oven to 350 degrees F

Coat muffin pan with baking spray (12 cup muffin pan is best for portion control) mix all the dry ingredients together and then the wet. Leave out the apples and raisins for the end. Combine wet into dry and then fold in the apples and raisins. Mix well

Bake for about 20 minutes. enjoy!
