Simple Guacamole

Simple Guacamole

My tip for guacamole? You need some good avocados! I only get from two places. Stew Leonard’s OR Costco. Because they are always consistently good! I buy my avocados un-ripened and then i put them in a large bowl and place some ripe bananas on

Cranberry Apple Oat Muffins

Cranberry Apple Oat Muffins

It’s like an oatmeal cup. This is a GREAT toddler friendly recipe. It has only good nutrients inside but shaped like a muffin so it fools them into thinking it’s a treat! It’s great for on the go just nuke in the microwave. I make

Hummus

Hummus

A really simple (and cheap) way to make hummus. I think when you make it from scratch it just tastes BETTER. When I buy hummus from the store, I literally taste refrigerator. This hummus is just creamy , delicious and of course…nutritious. I took out some calories. Here’s how…. Ingredients:

Ingredients

  • 1 can of chick peas rinse the chick peas and drain
  • 1 tbsp water
  • 1 tbsp lemon juice or 1/2 squeezed lemon, i usually don’t squeeze the full half
  • 1-2 tbsp olive oil
  • salt and pepper to taste

Instructions

  • Put all ingredients except oil and seasoning in a food processor and process until smooth. Hold the oil until it’s all smooth and let it drizzle in as the food is being mixed, about 1 tbsp. If your hummus was looking too cakey before the oil you can drizzle a little water in first. Add salt and pepper towards the end to make sure it tastes how you like it. Enjoy!

Beet Goat Cheese Salad

Beet Goat Cheese Salad

Beets make a fantastic addition to any salad! They’re a great source of folate and fiber per cup…which means you can feel like popeye AND have great digestive health all day…pretty awesome.* This recipe is great if you have all of these things on hand.

I started this site seven years ago. It was my hobby, my passion and new addiction!

I got married had a baby and things got busy as a full time working mom, with a husband who works double time. I didn’t renew my site because I forgot about it and all my information was lost! All my recipes for years!

I started rebuilding this site a few months ago and I’ve been so excited to even just get one new follower! I now feel like I’m in the works of having this identity back again!

So thank you everyone for your support. I look forward to your comments, likes and years of recipes and tips to come!

20g of fiber is your whole days worth! I suggest you make this, have half and the other half will stay good for up to 5 days! This is not a great meal replacement it needs a protein so as a snack it works, if it’s breakfast either throw a yogurt into the shake or eat it with some eggs!

You have at least half your days worth of vitamin C vitamin k in one shake! We know vitamin C is great for the immune system but is also great for your skin and wound healing Just like Vitamin K!

Spicy Mayo Dressing

Spicy Mayo Dressing

For salads that have more of an asian flair! Such as avocado chicken cucumber carrot…..my favorite. It also works well on a salad with tofu and roasted vegetables. Since there is sesame oil you really have to pick and choose your flavors in the salad.
