Beet Goat Cheese Salad

Beets make a fantastic addition to any salad! They’re a great source of folate and fiber per cup…which means you can feel like popeye AND have great digestive health all day…pretty awesome.* This recipe is great if you have all of these things on hand. If you don’t I suggest you make them (roast some beets, seed a pomegranate) because you can add this to salads for up to a week!

2oz creamy goat cheese, cut into chunks
