What I LOVE about a recipe like this is that it’s sweet and satisfying but also extremely functional! All the ingredients are just basically powerful and packed into less than 120kcal per serving!

Chocolate Chip Almond Flour Muffins
Ingredients
- 8 oz almond flour see below instruction on how to make almond flour. It's about 2 cups
- 1/2 tsp baking soda
- 2 tbsp brown sugar
- 3 eggs
- 1 banana
- 2 tbsp mini chocolate chips
- 1/4 cup milk can use any kind i used whole milk
Instructions
- To make almond flour: Start with about 1 cup of almonds. Use a food processor or a vitamix and pulse (if vitamix, use a medium setting like 5/6) about 40-50 times. You want it to be powdery. Make sure you use a spoon or spatula ever so often to get the sides so it doesn't end up like almond butter.
- Combine almond flour with baking soda. In a separate bowl combine the sugar, eggs, mashed banana and milk. Add the wet ingredients to the dry ones. Sprinkle in the chocolate chips.
- Coat 10 muffin tins with baking spray and add batter to the tins.
- Bake in the oven at 350 degrees F for about 12-15 minutes.
