Coconut Rice Bars

A delicious brown rice cereal bar with protein and fiber!

Ingredients
  

  • 2 cups puffed brown rice I bought this from Nuts.com. They're so crispy and delicious!
  • 1/4 cup Flax seed, ground
  • 1/4 cup maple syrup
  • 1/2 cup almond butter
  • 2 tbsp toasted coconut or unsweetened
  • 2 tbsp raisins

Instructions
 

  • First mix together the almond butter with 2 tbsp of the maple syrup
  • Add puffed rice, raisins, coconut and flaxseed to a large bowl
  • combine the two and mix with hands.
  • Add the remaining 2 tbsp maple syrup and use a wooden spoon to combine
  • Coat a 9" baking pan with cooking spray. With wet hands press the mixture into the pan very tight. Add foil on top so you can really shove it all together. If you get lazy on this part (as i have in the past) the result may be a crumbly bar….which we don't like.
  • Refrigerate for 2 hours! Cut into 8 servings.
