Every now and again I get a craving for this, sliced in half and toasted with some butter and coffee! I found this recipe on the allrecipes website and I didn’t change anything about it! Some people were changing things to make it “healthier” but then you would be left with a spongy texture and maybe like 5 less calories?
Believe me when I say this is the best way to make this muffin healthy, tasty and exactly the texture it’s supposed to be! Credit to Lorriet1
Ingredients:
1 1/2 cups all purpose flour
2 1/2 cups wheat bran
1 tsp salt
1 1/2 tsp baking soda
2 eggs
1 1/2 cups buttermilk
1/2 cup sugar
1/4 cup dark molasses
2 tbsp oil
1/2 c raisins
Directions:
Preheat oven to 350° F. Coat 16 muffin tins with baking spray or cooking spray. Mix all dry ingredients together set aside. Mix eggs through oil together in a separate bowl. Set aside. Combine both together and mix until all combined while adding in raisins. Don’t overmix.
Bake for 18 minutes!
