Serves 1 or 2
Ingredients
1c roasted pumpkin
1c roasted Brussels sprouts
1c roasted peppers
1 roasted yellow squash
1/2c roasted carrots
1c Romain lettuce
2oz fresh feta cheese
1tbsp balsamic vinegarette
Directions:
First, toss the lettuce with balsamic vinegar it.
Add all of the roasted vegetables and toss to combine
Crumble the feta on top.
