“Pasta Salad”
A fun way to have a large salad without the carbs!
Ingredients
- 2 medium yellow squash and zucchini zoodled or shaved
- 1 cup artichokes chopped
- 1/4 cup kalamata olives sliced in half
- 1/4 cup parsley chopped
- 1/2 cup yellow and red cherry tomatoes sliced in half
- 1/2 cup feta cheese crumbled
- 1 lemon squeezed and zested
- 1 tbsp olive oil
- 1/4 tsp dried oregano
- 1/4 tsp salt and pepper
- 1 tbsp white wine vinegar
- 1 clove garlic minced (chop fine)
Instructions
- Combine all ingredients except feta and toss well! Add feta in and toss lightly until desired taste and consistency. Add more feta/salt/pepper as needed for flavor!
Notes
Nutrition Tip:
Add 6 crispy chicken nuggets to the finished product for a complete low calorie dinner!
