Ingredients
  

  • 2 medium yellow squash and zucchini zoodled or shaved
  • 1 cup artichokes chopped
  • 1/4 cup kalamata olives sliced in half
  • 1/4 cup parsley chopped
  • 1/2 cup yellow and red cherry tomatoes sliced in half
  • 1/2 cup feta cheese crumbled
  • 1 lemon squeezed and zested
  • 1 tbsp olive oil
  • 1/4 tsp dried oregano
  • 1/4 tsp salt and pepper
  • 1 tbsp white wine vinegar
  • 1 clove garlic minced (chop fine)

Instructions
 

  • Combine all ingredients except feta and toss well! Add feta in and toss lightly until desired taste and consistency. Add more feta/salt/pepper as needed for flavor!

Notes

Nutrition Tip:
Add 6 crispy chicken nuggets to the finished product for a complete low calorie dinner!
