Peach and Corn Salad
Ingredients
- 1 Ear of corn Cooked (charred on a grill or steamed)
- 1 medium peach chopped
- 1 large cucumber peeled, seeded and chopped
- 1 red pepper chopped
- 1/3 cup cilantro chopped
- 2-3 large scallion chopped
- 1 small jalapeno optional
- 1 avocado sliced
- 1/4 cup feta
For the dressing
- 1/2 lime juiced
- 1 lemon juiced
- 2 tbsp olive oil
- salt and pepper to taste
Instructions
- Toss all ingredient together in a large bowl. Set peaches and avocado aside and fold in at the end in order to keep their integrity
- Eat with a spoon!
