Spicy Mango Cabbage Salad

Ingredients
  

  • 1 cup Red cabbage shredded
  • 1 cup green cabbage shredded
  • 1/4 cup red onion sliced fine
  • 1/4 mango sliced fine
  • 1/2 tbsp olive oil
  • 1/2 large jalapeno pepper chopped well
  • 1/2 cup carrots shredded
  • salt and pepper to taste
  • 1/2 large orange squeezed and zested
  • 1/2 large lime squeezed and zested
  • 1/2 cup fresh cilantro chopped

Instructions
 

  • You can do an easy version and a prepping version!
  • The easy version is you buy 3 regular sized bags of cabbage slaw mix.
  • The harder version is you shred your cabbage either with a mandolin you chop it very fine with your awesome knife skills or you throw it into your food processor,
  • If you are using the food processor you can do the carrots as well. Use the shredding attachment and shred all components.
  • Now that you have your mixed cabbage slaw you add the FUN stuff. So throw in the thinly sliced red onion, jalapeño pepper, mango, fresh cilantro. Squeeze the orange and lime and then zest them into the mix. Top with olive oil, salt and pepper and toss well. taste and adjust salt and pepper as needed!
