Ingredients

carrot
peeled and sliced

onion
chopped

large bunch
escarole
1
can
white cannellini beans
drained and rinsed

Chicken stock
Instructions
In a large pot heat oil and add garlic, carrots and onion. Stir until fragrant and starting to brown
Add escarole and cook until wilted
Add broth and bring to a boil, then lower to simmer
Add the beans and cover on medium low heat. Cook another 5 minutes
Serve with Parmesan if desired
