White Bean and Escarole Soup

White Bean Escarole Soup

Ingredients
  

  • 1 tbsp oil vegetable is fine
  • 2 cloves garlic chopped
  • 1 large carrot peeled and sliced
  • 1 onion chopped
  • 1 large bunch escarole
  • 1 can white cannellini beans drained and rinsed
  • 4 cups Chicken stock

Instructions
 

  • In a large pot heat oil and add garlic, carrots and onion. Stir until fragrant and starting to brown
  • Add escarole and cook until wilted
  • Add broth and bring to a boil, then lower to simmer
  • Add the beans and cover on medium low heat. Cook another 5 minutes
  • Serve with Parmesan if desired
