Pickles bulk up the flavor and moisture in this low calorie potato salad

Ingredients
  

  • 1 Tbsp yellow mustard
  • 1/2 Tbsp apple cider vinegar
  • 2 Tbsp low fat mayo
  • 1/2 Cup dill pickles chopped
  • 1.5 Cups red baby potatoes cooked and sliced in half
  • 1 egg hard boiled and chopped
  • 1/4 Cup parsley chopped
  • 1/4 Cup red onion chopped
  • salt and pepper to taste

Instructions
 

  • combine the mayo mustard and vinegar
  • toss all ingredients together in a large bowl. Spoon in the mixed dressing and toss well
