Ricotta Toast
Not complicated but OH SO GOOD.
Ingredients:
2 tbsp. whole milk ricotta
1 slice of whole grain bread
2 tsp fig jam
1 tbsp. crushed or chopped pecans
cinnamon
Directions:
Toast bread, add jam
Spread ricotta cheese on top
Sprinkle with chopped pecans and dust with cinnamon

Why this is so good:
At 200 calories this makes an excellent snack or light breakfast. Why? it is BALANCED! We have to have balance in order to feel satisfied. Just having a handful of pretzels as a snack or eggs and bacon for breakfast without the other food groups does not complete your meal and won’t complete YOU! Consider this next time you need to be held from lunch to dinner or if you find yourself going out for an early lunch. Never skip a meal, just make it more skimpy 🙂
Simple Quinoa Recipe

I don’t know what it is about the grain but every time I eat it I seem to feel a little healthier! With all the fiber and protein it’s a balanced meal all on its own. But I like to cook this very simple with minimal ingredients and then add things that I am in the mood for. See below on how to make perfect quinoa.
Serves 4
Ingredients:
1 cup uncooked quinoa
2 cups water
Directions:
Boil 2 cups of water with a little bit of salt. Once boiling add quinoa and stir. Bring the boil down to a medium summer and Cover. Let that go for about 12 minutes. Uncover fluff and take off the heat and let it sit for 15 minutes. Done!
