Potato Salad (with pickles)

Add dill pickles to reduce calories from mayo and oil!

Healthy Potato Salad
Pickles bulk up the flavor and moisture in this low calorie potato salad
Ingredients
- 1 Tbsp yellow mustard
- 1/2 Tbsp apple cider vinegar
- 2 Tbsp low fat mayo
- 1/2 Cup dill pickles chopped
- 1.5 Cups red baby potatoes cooked and sliced in half
- 1 egg hard boiled and chopped
- 1/4 Cup parsley chopped
- 1/4 Cup red onion chopped
- salt and pepper to taste
Instructions
- combine the mayo mustard and vinegar
- toss all ingredients together in a large bowl. Spoon in the mixed dressing and toss well
