I’ve been making this recipe for about 15 years! It’s the first thing I ever baked. It’s been tweaked a few times to be exactly what I want….
This makes 2 loaves, 24 servings (12 each loaf)
Ingredients:
3 1/2 c all purpose flour
1 1/2 tsp salt
2tsp baking soda
1 tsp connamon
1/4 tsp ginger
3c sugar
1c applesauce
2/3c water
4 eggs
1, 16oz can of Libby’s pure pumpkin puree
Directions:
Preheat oven to 350 degrees F
Use 2, 9″ baking loaf pans, coat with baking spray
Combine flour through ginger in one bowl. Whisk dry ingredients together and combine well. Add sugar, water, eggs and applesauce to another bowl and combine well.
Add the wet ingredients to the dry ingredients but don’t over mix. Mix it slowly. Fold in the pumpkin at the end.
Add the mix to the two loaves, bake for 60 minutes!
