Tomato Lentil Soup

I made this recipe when I was in the mood for something healthy, warm and...took care of some of the reminants i had left in the refrigerator

Ingredients
  

  • 1 tbsp oil vegetable
  • 3 celery stalks peeled and cut into large chunks
  • 1 onion cut into large chunks
  • 1/2 bag baby carrots 16oz bag
  • 1/2 bag dried lentils brown or green
  • 1/2 cup marinara sauce
  • 6 cups water or more
  • 1/2 bouillion cube
  • 1 bay leaf
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 tsp oregano
  • 1 tsp thyme

Instructions
 

  • In a large pot add oil and wait for it to heat up. Add the celery and onion and cook until translucent
  • Add the carrots and stir well. Add salt, pepper, oregano and thyme here
  • Add the bouillion cube and combine well
  • Add lentils
  • stir together, add marinara and stir well
  • add the water and bay leave. Stir and bring to a boil
  • cover, simmer
  • simmer for about 2-3 hours for best results! The lentils should be very soft. Add water as needed and desired.

Notes

Nutrition Tip: I like this to be more brothy than thick so I keep adding water as I go. When you store it and reheat use more water! Enjoy!
