White Bean Escarole Soup
Tastes so healthy 🙂
Ingredients
- 1 tbsp oil vegetable is fine
- 2 cloves garlic chopped
- 1 large carrot peeled and sliced
- 1 onion chopped
- 1 large bunch escarole
- 1 can white cannellini beans drained and rinsed
- 4 cups Chicken stock
Instructions
- In a large pot heat oil and add garlic, carrots and onion. Stir until fragrant and starting to brown
- Add escarole and cook until wilted
- Add broth and bring to a boil, then lower to simmer
- Add the beans and cover on medium low heat. Cook another 5 minutes
- Serve with Parmesan if desired
