Tomato Lentil Soup
I made this recipe when I was in the mood for something healthy, warm and...took care of some of the reminants i had left in the refrigerator
- 1 tbsp oil vegetable
- 3 celery stalks peeled and cut into large chunks
- 1 onion cut into large chunks
- 1/2 bag baby carrots 16oz bag
- 1/2 bag dried lentils brown or green
- 1/2 cup marinara sauce
- 6 cups water or more
- 1/2 bouillion cube
- 1 bay leaf
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tsp oregano
- 1 tsp thyme
In a large pot add oil and wait for it to heat up. Add the celery and onion and cook until translucent
Add the carrots and stir well. Add salt, pepper, oregano and thyme here
Add the bouillion cube and combine well
Add lentils
stir together, add marinara and stir well
add the water and bay leave. Stir and bring to a boil
cover, simmer
simmer for about 2-3 hours for best results! The lentils should be very soft. Add water as needed and desired.
Nutrition Tip: I like this to be more brothy than thick so I keep adding water as I go. When you store it and reheat use more water! Enjoy!
