This recipe makes 4, 6oz pouches and 1 small 4oz shake (so 5 servings)

Ingredients:

1/4c whole milk

1, 6oz container of full fat greek yogurt

small handful of spinach

1 pear

1c frozen mango

1/4c oats

Directions:

Blend well. You may need to use a damper to push all the ingredients into the blade of your blender. The consistency should be a little thinner than greek yogurt. If you have some left over and don’t want to make another pouch add a little more milk and blend to make a shake!

Broccoli Cheddar Soup

If you’re looking to get in your veggies I’d say this is a good way to start! This is a vitamix recipe rendered a bit! I’ll explain how to do this in a soup blender or regular old fashioned in a pot! Either way it’s so delicious and my favorite quick healthy soup!

Equipment

  • 1 vitamix ORRRRR
  • 1 Large pot

Ingredients
  

  • 1, 16 oz bag of frozen broccoli if you are using fresh, about 2-3 cups
  • 1 tbsp onion powder
  • 1/3 bouillon cube
  • 1/2 cup whole milk
  • 1/2 cup water Use chicken or vegetable broth if not using a blender.
  • 1/2 c shredded sharp cheddar

Instructions
 

  • Directions:For the blender: Microwave broccoli with 1 tbsp of water for 5 minutes (you can use a large glass dish and cover with saran wrap). Add the steamed broccoli with water into the blender then cheese, bouillon onion powder, water and milk. You can reserve a few florets for the end! Start at a low setting and then increase to the highest setting (for mine it's the soup setting) for about 6 minutes until steaming hot. Make sure you cover the top with a wet cloth.
  • For the pot: Add the broccol to a large pot with about 1/2c chicken broth and steam for about 5 minutes covered. Add milk and broth and use a hand blender to blend all ingredients. Once they are smooth turn up the heat for minutes. Add cheese and onion powder. Add more broth for desired consistency.

This was a recipe from a book I have by Yotam Ottolenghi. I love that he elevates vegetable dishes to an extreme level! Makes about 20-25 Ingredients: 4 medium sized eggplants 3 medium potatoes 5oz feta cheese 1, 1/2c breadcrumbs 1 egg 1/4 tsp salt 

10 minute General Tso’s Chicken

10 minute General Tso’s Chicken

Great dish and comfort food for when it’s cold and you really feel like a hearty meal! Calories can be reduced by cutting the oil you use to cook the chicken. In many chinese restaurants they cook with a lot of oil. That oil contributes to the calories in your food that make you gain weight without you even tasting it!

Serves 4

Ingredients:

1lb chicken breast, cut into 1-2 inch cubes

1/2c cornstarch

Sauce ingredients:

1/4c hoisin sauce

2 tbsp brown sugar

1 tbsp honey

3 cloves of garlic, chopped

3 tbsp rice wine vinegar ( i used white wine vinegar and it came out great!)

1 tsp sesame oil

Directions:

Cut up chicken and toss well with cornstarch in a bowl

Add a very thin layer of vegetable oil to a large non-stick skillet. Cook chicken for about five minutes and then flip over to the other side until there is no more cornstarch or pink chicken. Turn down the heat to medium low and add sauce, stir well to combine. Turn off the heat and let it all thicken. SERVE
