My husband found this recipe from Giada’s website! It’s actually pretty healthy and sooooo tasty! I didn’t change a thing!
Ingredients:
1lb chicken breast, sliced in half longways and pounded thin
1/4c flour
salt and pepper
1/2 lb portobello mushrooms, sliced
2 shallot, sliced
2 garlic cloves, minced
1 tsp dried thyme
1/2c marsala wine
1/2c stock (i used vegetable stock)
Directions:
Salt and pepper the chicken breast on both sides. Dredge in flour and shake off.
In a large skillet heat oil for a few minutes. Add the chicken and cook on both sides for about 5 minutes each until cooked.
remove chicken from pan. Add the onions and garlic and cook until translucent. Add the mushrooms and cook for a few minutes. Add thyme. Add the marsala wine and wait 3 minutes until it cooks down (keep on medium high heat). Then add the stock and cook an additional 2 minutes. Add chicken back to the pot and stir mushrooms on top. Serve!
