Lemony Pea Soup
Delicious low-calorie soup to add to any meal
Ingredients
- 1 lb bag of green split peas
- 1/2 tsp salt and pepper
- 2 cloves garlic
- 8-10 c water
- 4 celery stalks chopped
- 4 large carrots chopped
- 1 large onion chopped
- 2 cups baby carrots
- 1 bay leaf
- 1 lemon
- pinch of rosemary
Instructions
- Directions:
- In a large pot add 1 tbsp oil and then add the chopped garlic, celery, carrots and onion. Let that cook a few minutes and then add split peas, salt and pepper and stir. Add the water and bay leaf, bring to a boil and then on low, uncovered.Cook for about 30 minutes. Uncover, add water to desired thinness and then zest the lemon and add rosemary. Discard the bay leaf, serve hot! 🙂
