Lemony Pea Soup
Delicious low-calorie soup to add to any meal
Ingredients
- 1 lb bag of green split peas
- 1/2 tsp salt and pepper more to taste at the end
- 2-3 cloves garlic
- 8-10 c water Water should fill about 4 inches over the peas
- 4 celery stalks chopped
- 4 large carrots chopped
- 1 large onion chopped
- 2-3 bay leaves
- 1/2 lemon
Instructions
- Directions:
- In a large pot add 1 tbsp oil and then add the chopped garlic, celery, carrots and onion. Let that cook a few minutes and then add split peas, rosemary salt and pepper and stir. Add the water until it fills about 3-4 inches over the top of the peas. Throw in the bay leaves and bring to a boil. Then simmer medium low.Cook for about 30 minutes, uncovered. Then cover and let it cook for about 2 hours. Uncover, zest the lemon, squeeze the juice out and adjust salt as needed. Discard the bay leaf, serve hot! 🙂
