Lemon Split Pea Soup

Ingredients
  

  • 1 lb bag of green split peas
  • 1/2 tsp salt and pepper more to taste at the end
  • 2-3 cloves garlic
  • 8-10 c water Water should fill about 4 inches over the peas
  • 4 celery stalks chopped
  • 4 large carrots chopped
  • 1 large onion chopped
  • 2-3 bay leaves
  • 1/2 lemon

Instructions
 

  • Directions:
  • In a large pot add 1 tbsp oil and then add the chopped garlic, celery, carrots and onion. Let that cook a few minutes and then add split peas, rosemary salt and pepper and stir. Add the water until it fills about 3-4 inches over the top of the peas. Throw in the bay leaves and bring to a boil. Then simmer medium low.
    Cook for about 30 minutes, uncovered. Then cover and let it cook for about 2 hours. Uncover, zest the lemon, squeeze the juice out and adjust salt as needed. Discard the bay leaf, serve hot! 🙂
