Lemon Split Pea Soup

Ingredients
  

  • 1 lb bag of green split peas
  • 1/2 tsp salt and pepper
  • 2 cloves garlic
  • 8-10 c water
  • 4 celery stalks chopped
  • 4 large carrots chopped
  • 1 large onion chopped
  • 2 cups baby carrots
  • 1 bay leaf
  • 1 lemon
  • pinch of rosemary

Instructions
 

  • Directions:
  • In a large pot add 1 tbsp oil and then add the chopped garlic, celery, carrots and onion. Let that cook a few minutes and then add split peas, salt and pepper and stir. Add the water and bay leaf, bring to a boil and then on low, uncovered.
    Cook for about 30 minutes. Uncover, add water to desired thinness and then zest the lemon and add rosemary. Discard the bay leaf, serve hot! 🙂
