Quick Black Bean Soup

Serves 2

When you’re working from home or it’s the weekend a quick lunch is def necessary. But if you don’t have canned soup available (which i HATE with a passion) making a pot of soup is just NOT on the agenda….who has that kind of time? I DON’T! This recipe is only a few ingredients that you probably already have. Makes for a nice quick, low calorie, HEALTHY and FILLING meal.

Ingredients:

2 cups of black beans (or one can), drain and rinse if it’s a can.

2 cups, or 1/2 carton of vegetable broth

1 can chopped tomatoes

Directions:

You can do one of two things. If you have a soup blender you can add all of these things together and then blend on soup setting for 6 minutes (which is what i do).

If you don’t have that, use a large pot. Place the black beans and broth in the pot and turn on medium heat. Let it get really hot and then use an immersion blender to blend all ingredients together. Add more water/broth and season to taste.

Top with canned chopped tomatoes, a dollop of greek yogurt or sour cream and some chopped parsley or cilantro (whatever fresh herbs you have if you can swing it).

Calories: 227kcal (with yogurt or sour cream it would be more like 280)

Protein: 15g (with greek yogurt it would be around 20g)
