Tomato Lentil Soup
I made this recipe when I was in the mood for something healthy, warm and...took care of some of the reminants i had left in the refrigerator
Ingredients
- 1 tbsp oil vegetable
- 3 celery stalks peeled and cut into large chunks
- 1 onion cut into large chunks
- 1/2 bag baby carrots 16oz bag
- 1/2 bag dried lentils brown or green
- 1/2 cup marinara sauce
- 6 cups water or more
- 1/2 bouillion cube
- 1 bay leaf
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 tsp oregano
- 1 tsp thyme
Instructions
- In a large pot add oil and wait for it to heat up. Add the celery and onion and cook until translucent
- Add the carrots and stir well. Add salt, pepper, oregano and thyme here
- Add the bouillion cube and combine well
- Add lentils
- stir together, add marinara and stir well
- add the water and bay leave. Stir and bring to a boil
- cover, simmer
- simmer for about 2-3 hours for best results! The lentils should be very soft. Add water as needed and desired.
Notes
Nutrition Tip: I like this to be more brothy than thick so I keep adding water as I go. When you store it and reheat use more water! Enjoy!
