Butternut Squash Muffins

Because pumpkin isn’t the only star in this town…

Butternut squash is a good source of B and E vitamins plus has a lot of added benefits like fiber!

Ingredients:

1c cooked and pureed butternut squash (i roasted mine 350 degrees F 30 minutes and threw it in a food processor)

1c unsweetened applesauce

1 tsp cinnamon

1 tsp baking soda

1/4 tsp baking powder

1 1/2c whole wheat or regular white flour

1/4c brown sugar

2 eggs

Directions:

Preheat oven 350 degrees F

Mix applesauce and squash together with cinnamon, set aside.

Mix all dry ingredients (baking soda through flour).

Beat eggs with sugar and then fold in the butternut squash mixture.

Add the mixture into 9 greased cupcake tins (use baking spray)

Bake for 15-18 minutes.

Nutrition Tip:

1 of these muffins mashed into a cup of greek yogurt is a great balanced breakfast! Or have it plain with some coffee for a nice boost an hour before you exercise.
