Lentil Soup

There are so many ways to make this, however, this is my favorite! Basic and simple

Servings 8

Ingredients
  

  • 1 Tbsp Oil Vegetable
  • 3 Large carrots Peeled and cut into large pieces
  • 3 Celery stalks Chopped
  • 1 Large onion Chopped
  • 2 Garlic Chopped
  • 1 16oz bag lentils Red or brown
  • 6 Cups Chicken stock
  • Salt and pepper To taste

Instructions
 

  • First sauté the onions celery and carrot with the garlic in a large pot with oil. Add a little salt here.
  • Add the lentils and stir around for a few minutes so they get toasty.
  • Add the broth and then bring to a boil and simmer covered for about 2 to 3 hours until lentils break. You can continue to add water here as desired.
  • Use an immersion blender to blend some of the lentils but still keeping the soups texture just a few pulses
